“Our intention is not to let specialty coffee something difficult to reach, or something only for special occasions. We would love specialty coffee to be the first-best standard coffee that everyone can drink every day”, explained K. Mix Pirasin, one of the founders of Varinda Specialty Coffee, together with K. Noon Rinlada.

With that statement of strong intention above, we would like to know the story behind Varinda Specialty Coffee and how it's become Varinda Specialty Coffee like we all know today. What makes them feel so decidedly to make specialty coffee be the first-best standard coffee for all coffee lovers.

Gother will let you indulge with coffee, and meet K. Mix and K. Noon, who are the champion baristas at Varinda Specialty Coffee. Originally, both were not even coffee drinkers and had zero expertise in coffee. How could they reach the front-row in the coffee arena, and become the owner of this prominent Specialty Coffee shop? Even knowledge about coffee is generously exchanged in this specialty coffee shop. Gother has the answers for you.

From “non-coffee drinkers” to the owners of a Specialty Coffee Shop

As mentioned earlier, Varinda Specialty Coffee started from non-coffee drinkers. They had no mastery of coffee or coffee making. It is so unimaginable for us how Varinda Specialty Coffee Shop was founded. Finally, K. Mix revealed that he accidentally had a chance to try rare specialty coffee. At that time, the word “Specialty Coffee” was not widely used and still not very popular. That was the first time he truly realized that the taste of coffee could be highly complex and subtle. He became curious whether he could uniquely present specialty coffee of his own styles by using different characters of coffee beans.

Once the goal was set, K. Mix and K. Noon then started to find whatever they had in the kitchen to roast coffee beans eagerly. They would like to finely control the flavors and aromas themselves. Learning by trials and errors, they finally let their friends and family try their own creations. There were several compliments approving that the taste was so satisfactory and couldn't be found elsewhere. The encouragement from people around them eventually made them decide to open a coffee shop.

Joined a competition to be more confident.

Having looked around on the coffee bean shelf of Virinda Specialty Coffee, there are noticeably a lot of trophies placed up there. K. Mix eagerly let us know there were many times when they received compliments from the coffee drinkers around their shop. However, they were so unsure about the strengths and weaknesses of the coffee they delicately crafted. Besides, it would be great to know whether there was any room for improvement.

That was when they decided to join various competitions. They desired to receive honest and constructive feedback from coffee specialists. Additionally, they would have chances to taste delicious coffee from other competitors and to develop their own skills. Finally, both became champions for Coffee Roasting and Profiling in two competitions, TCEC's Champion of Diedrich Roasting Competition of Thailand (12-15 November 2020), and the Champion of Thailand Coffee Profiling Challenge (14 July 2022).

Apart from having wonderful coffee at Varinda Specialty Coffee, of which one can be sure of its first-best standard, there are also shelves of pastries. Each of them lures us to savor, yet the most delicious looking one is the golden Focaccia Bread, normally found only in an Italian restaurant.

We urged K. Mix and K. Noon to tell us why they had chosen these pastries for their customers in the shop. They said every time they travelled both domestically and internationally, they were very much inspired. They strived to learn coffee cultures wherever they went; as well as how each country around the world paired their coffee with pastries. This is the why tempting pastries are being served to complement coffee drinking here. This new experience of coffee pairing with pastries can only be found at Varinda Specialty Coffee.
